The best of the three sibling bars (Tram, Trench, Triad). What sets Trench apart is the bartenders — they're genuinely cool, engaged, and make drinks that feel considered rather than formulaic. The absinthe cocktails are the specialty, but everything on the menu is good. The space is small and intimate, which means you'll probably end up talking to whoever's sitting next to you. Of all the cocktail bars in Ebisu, this is the one I'd go back to first.
